I’m usually a dairy lover – cheese, butter, cream – bring it on I say. But when I made ice-cream recently (surely not that hard?), I decided to rock out a non-dairy version. And with an overabundance of strawberries practically ripening at a rate of knots before my eyes, the flavour of ice-cream was decided.
Not possessing an ice-cream maker I went on the google machine and found this recipe from Immer Wachen. The great thing about this recipe is that it gives you different options for making it, ice-cream maker or not.
The only thing I did differently is use 1 can of coconut cream and 1 can of coconut milk (because stupidly that’s what I bought!). I don’t think it made much difference as it came out delectably creamy.
Also when processing the strawberries I kept them fairly chunky as I like that texture in the ice-cream.
