My diet is a bit simple these days with no processed food on the eating list (except for a splurge or two on the weekend). I’ve been making heaps of healthy snacks to keep me and Hovi going and to help fill the lunch boxes.
My clean eating doesn’t mean I can’t bake though! One of the easiest snack I’ve been making is these delightful little cookies. They only take a few minutes to throw together and 15 to bake. Boom! What could be easier?
I’ve also made these minus the cacao and added peanut butter for that yummy banana peanut butter taste (or is that just me?).
The cookies taste divine straight from the oven and store pretty well in an airtight container although you may want to zap them in the microwave to heat them up.
The batter should yield about 16 cookies.
1.5 cups of oats
2 ripe bananas mashed
1/4 cup of walnuts
Spash of vanilla essence
1 tablespoon cacao powder
A springling of cacao nibs
Heat oven to 180 degrees celcius. Combine all ingredients together. Batter should be pretty sticky. Add more oats is mixture is too wet.
Roll into balls about an inch and a half wide and place onto baking sheet. Press down on each ball gently with a fork. Bake for approx 15 mins or so.
